Twice Baked Potatoes

6 | sweet potatoes |
1/4 cup | butter |
1 small | onion minced |
1 tbsp | packed brwn sugar |
3/4 tbsp | orange zest |
3/4 tsp | salt |
1/4 tsp | ground cumin |
1/4 tsp | grnd cinnamon |
1/4 tsp | pepper |
1/8 tsp | grnd allspice |
1/4 cup | sour cream |
2 tbsp | cilantro |
2 | egg whites |
Preheat oven 400. Place potatoes on baking sheet and bake until softened about hour. Cool for 15 min. Slice lengthwise and scoop out pulp. Mash pulp. In skillet Melt butter over med heat. Add onion and cook until softened. Add brwn sugar, zest, salt, cumin,cinnamon, pepper and allspice. Combine onion mixture with mashed potatoes Stir in sour cream and cilantro. Mix eggs on high speed until soft peaks form. Gentle lay fold in potato mixture. Scoop mixture back into shells or place in baking dish. Place bake in oven for 15-20 min until browned.
