    3 Tbl.  olive oil
    1 medium  onion-finely chopped
    1/2 cup  chopped celery
    2  garlic cloves
    1 pound  plum tomatoes or red pepper sauce
    1/4 cup  chopped fresh parsley
    2 Tbl.  fresh rosemary
    1 tbl.  all purpose flour or of choice
    3/4 cup  dry white wine
    6 cups  water
    1  8oz. orange roughy fillet cut in two pieces
    1  8oz. sea bass fillet
    8 oz.  uncooked shrimp
    4 oz.  cleaned skinned squid 1/2 in. rings

more chopped parsley, sea salt, olive oil

Heat 3 tsp. oil in large pot and add onion, celery, garlic. Cook 10 min. Stir in next four ingredients and saute two min. Sprinkle flour over and stir two min. Add wine and cook until liquid evaporates. Add 6 cups water and bring to boil. Reduce heat and simmer 20 min. Add fish and cook 3 min more then drizzle with olive oil before serving.
