Fishermans Soup (Cacciucco) 4 servings

3 Tbl. | olive oil |
1 medium | onion-finely chopped |
1/2 cup | chopped celery |
2 | garlic cloves |
1 pound | plum tomatoes or red pepper sauce |
1/4 cup | chopped fresh parsley |
2 Tbl. | fresh rosemary |
1 tbl. | all purpose flour or of choice |
3/4 cup | dry white wine |
6 cups | water |
1 | 8oz. orange roughy fillet cut in two pieces |
1 | 8oz. sea bass fillet |
8 oz. | uncooked shrimp |
4 oz. | cleaned skinned squid 1/2 in. rings |
more chopped parsley, sea salt, olive oil
Heat 3 tsp. oil in large pot and add onion, celery, garlic. Cook 10 min. Stir in next four ingredients and saute two min. Sprinkle flour over and stir two min. Add wine and cook until liquid evaporates. Add 6 cups water and bring to boil. Reduce heat and simmer 20 min. Add fish and cook 3 min more then drizzle with olive oil before serving.
