NACHO POTATO SOUP

1 pkg.(5-1/4oz) | AuGratin potatoes |
1can (11oz.) | whole kernel corn drained |
1 can | rotel tomatoes undrained |
2 cups | water |
2 cups | milk |
2 cups | cubed processed american cheese |
dash hot pepper sauce opt.
minced fresh parsley' opt.
In a 3 qt. sauce pan, combine the contents of potato pkg., corn, tomatoes, and water; mix well. Bring to a boil, stirring often. Reduce heat; cover and simmer for 15 -18 mins. or until potatoes are tender; stir often. Add milk, cheese, and hot pepper sauce (if desired); cook and stir until cheese is melted. Garnish with parsey if desired. Yield 6-8 servings (2quarts).
