MEXICAN Style DIP

1 c | organic yogurt, (make yogurt cheese if you have time but otherwise it will be a little thinner dip without doing so) |
1/2 c | organic cream cheese |
2 c | salsa, (homemade or favourite store bought) |
2 c | grated cheeses, (combine sharp cheddar with monterey Jack & Parmesan or other favourite hard cheeses) |
2 tblsp | diced fresh chives |
2 tblsp | Mexican seasoning, (combine your own with chilli powder, cumin, & chipotle powder or use store bought) |
1/4 c | chopped cilantro, (optional) |
To make yogurt cheese: Put 2 layers of cheesecloth in medium strainer placed over a catch bowl. Pour yogurt into cheesecloth. Let strain for 1/2 hour or so. You just want to get most of the water out.
1. Cream the cream cheese until very soft. Add yogurt & mix well with hand blender. Stir in chives. Spread on bottom of shallow casserole dish (about 8x8) or 2" deep decorative dish. Sprinkle with Mexican seasoning.
2. Carefully spread salsa on top of cream cheese/yogurt mix & seasoning.
3. Mix grated cheeses together in a bowl then sprinkle over salsa.
4. Sprinkle with cilantro or if your not keen on cilantro then just add sprig of it on top for presentation.
5. Serve with large or scoop style tortilla chips.
