3/4 lb | round steak |
8 c | water |
1 | bay leaf |
1/2 c | barley |
2 c | beets, (including beet greens) |
1 c | carrots |
1 c | potatoes |
1 c | beans |
1 c | peas |
1 | onion |
Chop up vegetables. Brown steak in soup pot if desired. Add water and bay leaf, bring to boil and simmer for 1 - 2 hours. Add barley. Let cook for 15 minutes. Add vegetables. Cook for 30 minutes longer or until barley and vegetables are cooked. Remove beef and dice. Return beef to pot.
Add cream and a can of condensed tomato soup if desired. Heat through and serve.
