    6  eggs

Place the eggs in one layer in a medium sauce pan, cover with 1" of water above eggs and bring to a boil over high heat. Remove the pan from the heat, cover, and let sit for 10 miutes. Meanwhile, fill a medium bowl with 1qt of water and 1 tray of ice cubes (or the equivalent).
Transfer the eggs with a slotted spoon amd let sit 5 minutes. Peel the egg by tapping the egg all over against the counter surface and then roll it gently back and forth a few times on the counter to crack the shell all over. Begin peeling from the air pocket (the wider end of the egg). The shell should come off in spiral strips attached to a thin membrane.
