Pear Cake

    3 1/2 C  grated pears
    2 C  sugar
    1 C  chopped pecans
      walnuts, alternative
    2 C  flour
    2 tsp  baking soda
    1 tsp  cinnamon
    1/2 tsp  salt
    2  eggs
    1 C  oil
    1 tsp  vanilla

--Preheat oven to 350. Grease & flour Bundt or tube pan.
--Combine grated pears with sugar & nuts. Let stand about 1 hr. Stir often as the mixture makes it's own juice. Sift together flour, soda, cinnamon, & salt. Add to pear mixture.
--Beat eggs well. Add to pear mixture. Add oil & vanilla; stir until combined
--Spoon batter into prepared pan. Bake 1 hr. Or until cake tests done. Cool 15-20 minutes, then remove from pan.
NOTE: To make a glaze, combine 1 C powdered sugar & 1/8 to 1/4 milk in small bowl. Drizzle over cooled cake.
