Chicken Cacciatore

Chicken breast | |
1/4 C | flour |
2Tbsp | olive oil |
2 Tbsp | butter |
onion chopped | |

1 can tomatoes (28oz) 1 can tomato sauce (8oz) 1 can tomato paste (6oz) | |
1C | water |
1tsp | thyme |
1tsp | rosemary |
1tsp | oregano |
1tsp | basil |
3 cloves garlic minced | |
1Tbsp | sugar |
Dust chicken with flour. season with salt and pepper. In a large skillet, brown chicken on all sides in oil and butter over med-high heat. In same skillet cook and stir onion, celery, and pepper for 5 minutes. Stir in the tomatoes, sauce, and paste, water, herbs, garlic and sugar. Bring to a boil. Reduce heat and simmer for 30 minutes.
Return chicken to the skillet. Cover and simmer for 45-60 minutes. Serve over pasta with fresh Parmesan cheese.
