1 lb Roma tomatoes, sliced approximately 3/8 inch think then quarter. Put in a food processor, add salt and pepper and chop to size. Put in a bowl for a few minutes, as water will separate from tomatoes. Pour off excess water before adding other ingredients. | |
1 16 oz can | tomato sauce, (add last) |
4 to 6 Serrano peppers, cut in half long ways, then slice across approximately 1/8 inch thick. Put into a food processor with lemon juice, garlic and 4 T, pre-processed tomatoes. When chopped put in the bowl with tomatoes. 1/4 to 1/3 Onion (white or yellow) slice 1/4 inch thick and coarse chop. Put in processor, add cilantro and chop to size. Add to tomatoes. | |

1 t | Pepper |
3 tsp | Cilantro, rough chop, do not use stems. Add to onions. |
Mix all ingredients together, taste, re-season, chill and enjoy.
