| Place seasoned roast in an open pan. Cook for 20 minutes at 500 degrees. Turn down to 275 degrees and cook for about 15 minutes per pound. When thermometer reads 125 degrees, remove roast from oven and let rest. The roast will continue to cook while it rests and this allows time for the juices to settle into the meat. |
