    5kg  lobster's shell
    4  carrots
    2  fennel
    6  leeks
    3  onions
    1pc  celery
    7 cloves  garlic
    2 tbs  tomato paste
    200ml  brandy
    5kg  ice
    3l  water
    100g  parsley
    200g  butter
    50g  cooking oil

Roast the shells in the oven, in the meanwhile make a small mirepoix of the veg.
Once the shells are roasted put them in a casserole with a bit of oil and add the tomato pure, burn it and add the brandy, burn the alchool then add the vegetable and let sear for 10 minutes.
Add the ice and the water and bring it to boil,turn the heat down and simmer for 4 hours.
at the very end put the bunch of parsley in the stock and pour over the butter noisette.
