American Goulash

1 lbs | lean ground beef, browned and drained |
1 lbs | whole wheat elbow macaroni, cooked according to package instructions |
1 Medium | bell pepper trimmed and diced |
1 Cup | diced onion |
6 ounces | tomato paste |
28 ounces | canned diced tomatoes w/ green chiles |
1 Cup | frozen corn kernels |
1 Bunch | cilantro, (chopped) (optional) |
1 Tbsp | minced garlic |
1 Tbsp | sweet paprika |
1/2 Cup | shredded cheese |
1/2 Cup | sour cream |
Brown and drain ground beef. Saute onion until translucent. Add green pepper and continue cooking until pepper is bright and beginning to soften. Add paprika and allow heat to wake up spices. Add frozen corn, garlic, paste and tomatoes and heat to bubbling, add in meat and allow flavors to combine. Stir in macaroni, allow to heat thoroughly. Garnish with cheese and sour cream.
