American Goulash

    1 lbs  lean ground beef, browned and drained
    1 lbs  whole wheat elbow macaroni, cooked according to package instructions
    1 Medium  bell pepper trimmed and diced
    1 Cup  diced onion
    6 ounces  tomato paste
    28 ounces  canned diced tomatoes w/ green chiles
    1 Cup  frozen corn kernels
    1 Bunch  cilantro, (chopped) (optional)
    1 Tbsp  minced garlic
    1 Tbsp  sweet paprika
    1/2 Cup  shredded cheese
    1/2 Cup  sour cream

Brown and drain ground beef. Saute onion until translucent. Add green pepper and continue cooking until pepper is bright and beginning to soften. Add paprika and allow heat to wake up spices. Add frozen corn, garlic, paste and tomatoes and heat to bubbling, add in meat and allow flavors to combine. Stir in macaroni, allow to heat thoroughly. Garnish with cheese and sour cream.
