Balsamic Chicken with Pine Nuts

2/3 cup | balsamic vinegar |
2 cloves | garlic, minced |
1/4 tsp | red pepper flakes |
4 | chicken cutlets |
2 tbsp | chopped green onion |
1-2 tbsp | pine nuts, toasted |
2 tbsp | chopped fresh parsley |
Whisk together the balsamic vinegar, garlic and red pepper flakes in a small bowl. Drizzle evenly over chicken cutlets in a large shallow dish. Let stand 15 mins.
Combine the green onions, pine nuts and parsley in a small bowl, set aside.
Cook chicken, discarding marinade, over medopiumhigh heat on a grill or saute pan for 4 mins on each side until desired degree of doneness. Top with pine nuts mixture.
