Heat 2 tablespoons of olive oil. Fry sliced red onion and 2 teaspoons of minced garlic until soft. Stir in a handful of assorted pitted and sliced olives, | |

Juice of one | lemon |
2 tomatoes cut into wedges
Add Salt and pepper to taste
Keep on heat until warmed through and then turn off.
Stir through 250g cooked pasta and a handful of rocket leaves
Leave to stand for 10 mins to absorb flavours
Due to lemon taste would be nice with a can of salmon added
