Chicken Corn Chowder with Cheese

2 tablespoons | butter |
1/3 cup | chopped celery |
1/3 cup | chopped sweet red pepper |
1-1/2 tablespoons | all-purpose flour |
2 cups | milk |
1 can | creamed-style corn |
1-1/3 cups | French's onions |
1 cup | diced cooked chicken |
2 tablespoons | chopped green chilies |
1/2 cup | shredded cheddar cheese |
Melt butter in a 3-qt. saucepan over medium high heat. Sauté vegetables in butter for 3 minutes or until crisp-tender. Blend in flour; cook 1 minute, stirring constantly. Gradually stir in milk and corn. Bring to a boil.
Reduce heat; simmer 4 minutes until thickened, stirring often. Add 2/3 cup French fried onions, chicken and chilies. Cook until heated through. Ladle into serving bowls. Sprinkle with remaining cheese and onions. Makes 4 servings
