Citrus Apricot Compote

350 gr | dried apricots |
600 gr | orange juice |
500 gr | water |
25 gr | sugar |
salt |
Combine apricots, o.j. and water. Bring to a simmer . Turn of heat and cover. Let sit until apricots absorb liquid. Puree with sugar and salt in vita prep. pass through a chinois. You can adjust thickness of sauce by adding a bit of o.j.
