Quince Jam

1 quart | water |
2 Tablespoons | lemon juice, divided |
3 pounds | quince |
1 1/2 cups | sugar |
Combine 1 Tablespoon lemon juice with 1 quart water in pot. Peel, core, and cut into dice. Place in water.
Bring to boil and simmer for 30 minutes or until tender. Remove half of the quince and puree the rest with the water. Return the quince puree and dice to pan. Add the rest of the lemon juice and return to a simmer. Add the sugar a little at a time letting the mixture return to a simmer after each addition. Cook until jam holds it's shape. About five minutes.
