Pear with Honey and Ginger

1200 gr | pears, sliced thinly |
600 gr | sugar |
200 gr | green apple jelly |
200 gr | acacia honey |
1 | lemon |
20 gr | fresh ginger, grated |
Combine all ingredients, bring to a simmer. Pour back into bowl. Cover with parchment and refrigerate overnight. Bring to boil, skim. Add apple jelly, return to boil. Check the set and jar when ready.
