    1200 gr  pears, sliced thinly
    600 gr  sugar
    200 gr  green apple jelly
    200 gr  acacia honey
    1  lemon
    20 gr  fresh ginger, grated

Combine all ingredients, bring to a simmer. Pour back into bowl. Cover with parchment and refrigerate overnight. Bring to boil, skim. Add apple jelly, return to boil. Check the set and jar when ready.
