2 Tbs | oil |
3-4 cloves | garlic, minced/pressed |
1/2 cup | onion, yellow, diced |
2 tsp | bagoong alamang, heaping |
4 cups | squash, 1/2" cubes |
3 cups | green beans, cut into 2" pieces |
12 oz | okra, frozen |
2 cups | chicken broth |
1 cup | coconut milk, (or a abit more to taste) |
Heat oil in a 3.5 qt pot or larger. Add garlic and heat until fragrant and light brown. Add oinons and saute for a few minutes. Add bagoong alamang and saute. Add squash and mix. Then add ocra. Then add green beans and mix. Add chicken broth, cover and cook until vegies are tender (approx. 10-15 minutes). Add coconut milk and cook until heated throug, 3-5 minutes.
