| 2 3/4 cup | flour |
| 1 tbs | baking powder |
| 1/2 tsp | salt |
| 2 | eggs |
| 1/2 | vegetable shortening |
| 8 tbs | unsalted butter softened |
| 1 1/2 cups | sugar |
| 3 tbs | sugar |
| 1 tbs | cinnamon |
Preheat oven to 250
Sift flour, salt, baking soda in a bowl
Beat shortening and butter together in another bowl
Add 1 1/2 cups sugar and beat until light and fluffy (about 5min)
Add eggs 1 at a time and beat well after each one
Combine flour and eggs and mix until smooth
In a small bowl mix 3 tbs sugar and cinnamon
Roll the dough into 1/2 inch balls and roll in sugar/cinnamon mix
Flatten to disks and space on a unlined baking sheet
Bake for 12 min until light brown
Cool on a rack
