<RecipeText>Cut big bit of chicken breast down middle. Season with salt oil over chicken then salt pepper too. Slap each side on the oil and salt. Skin side down on griddle first.
Jerk sauce - 4 spring onions not much stems. Crush 4-6 garlics into liquidizer with onions. Get 1 n half scotch bonnets chillies or habenero remove stalk. Remove white connecting seed parts put all in. Add thyme bout one sprig and 3 bay leaves without the middle stalk . Put all in. On teas spoon allspice level teaspoon nutmeg level teaspoon ground cloves . Half wine glass of rum. Same amount of white wine vinegar. Tablespoon of honey. Add fair bit of salt and fair bit of pepper. 3 or 4 tablespoons of olive oil. Whizz it up.
Turn chicken over for bout 3 mins. Pour jerk sauce into smallish oven dish. Then add chicken into dish skin side up so chicken is bath in sauce. Thyme and rosemary drizzle with olive oil and chuck over chicken and put into oven. add little honey over chicken once cooked.
Bout 15 mins should be done.
Put corn in boiling water bout 8 mins. Then grill on chicken used griddle pan on high. Don&apos;t burn. Drizzle with olive oil. Char on few sides. Once done drizzle with olive oil and one whole lime juice.
