Rice Pudding

    3 cup  white rice, cooked
    4 cup  milk, divided, soy milk?
    2/3 cup  sugar, or splenda
    1/2 tsp  salt
    2 egg  beaten
    1 cup  golden raisins
    2 Tbs  butter
    1 tsp  vanilla

Directions

1. Cook rice as directed.

2. Combine cooked rice, 3 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1 cup milk, beaten eggs and raisins. Cook 5 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
