Rice Pudding

3 cup | white rice, cooked |
4 cup | milk, divided, soy milk? |
2/3 cup | sugar, or splenda |
1/2 tsp | salt |
2 egg | beaten |
1 cup | golden raisins |
2 Tbs | butter |
1 tsp | vanilla |
Directions
1. Cook rice as directed.
2. Combine cooked rice, 3 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1 cup milk, beaten eggs and raisins. Cook 5 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
