Very Vanilla Ice Cream

2 1/2 cups | vanilla soy milk, chilled |
1 cup | coconut milk, not light |
2/3 cup | sugar |
1 1/2 tablespoons | vanilla extract |
1/4 teaspoon | xanthan gum |
In a blender jar, combine the soy milk, coconut milk, sugar and vanilla. Blend
until the mixture is ultra-smooth. Add the xanthan gum and blend again until
smooth.
Pour the ice cream mixture into an ice cream maker and freeze
according to the manufacturer's directions.
