<RecipeText>Versate la farina a fontana e mettete al centro 100 g. di strutto, un cucchiaino di sale e 2 cucchiai di acqua tiepida.
Lavorate gli ingredienti con la punta delle dita formando una pasta liscia e compatta aggiungendo, all&apos; occorrenza, ancora un pò d&apos;acqua.
Formate una palla e lasciatela riposare per almeno un&apos;ora.
Soffriggete il prosciutto a fuoco basso finchè il grasso sia sciolto.
Versatelo in una terrina, lasciatelo raffreddare quindi unite la mozzarella a dadini, il parmigiano, il provolone, il prezzemolo, le uova, insaporite con pepe e noce moscata e amalgamate bene tutti gli ingredienti.
Stendete la pasta per uno spessore di circa 3 mm e ritagliate dei cerchi aventi un diametro di 8-10 cm.
Mettete al centro di ogni cerchio un mucchietto di ripieno, quindi ripiegate la pasta formando delle mezzelune e sigillando bene i bordi.
In una padella, scaldate abbondantemente lo strutto e, quando sarà bollente, friggetevi i panzerotti un pò alla volta finchè non diventino ben dorati.
Scolateli, sgocciolateli su carta assorbente e serviteli subito.
