Chicken Cacciatore (Pressure Cooker)

3 lbs | chicken, cut into serving pieces |
1 cup | diced tomatoes |
1/3 cup | white wine |
1 1/2 cups | sliced onions |
1/2 cup | chopped carrots |
1/2 cup | chopped celery |
2 cloves | garlic, minced |
2 Tbsp | minced parsley |
1 tsp | oregano |
1 tsp | salt |
1/4 tsp | black pepper |

1 can (6 oz) | tomato paste |
Place all ingredients except tomato paste in pressure cooker.
Close cover securely.
Place pressure regulator on vent pipe and cook 8 minutes with pressure regulator rocking slowly.
Cool cooker at once.
Place chicken on warm platter.
Stir tomato paste into sauce in cooker.
Simmer until thickened.
Pour over chicken.
