<RecipeText>Preparazione

Tagliare a pezzi di circa 10 cm il budello e legarlo con del filo alle estremità formando delle ciambelle o delle piccole salsicce, facendo attenzione che il contenuto non esca fuori. In seguito bisognerà scaldare l’olio in un tegame, e versarci le ciambelle di pajata insieme al sale, la cipolla, la carota, il sedano, l’aglio e il peperoncino spezzettato.

Il tutto va rosolato a fuoco basso, facendo attenzione che la pajata non si attacchi, rigirandola di tanto in tanto con un mestolo di legno. Quando è ben rosolata, aggiungere il vino. Coprire subito il tegame con un coperchio lasciar cuocere per 10 minuti il tutto a fuoco sempre basso. Passati i 10 minuti, bisognerà togliere il coperchio dal tegame per lasciare evaporare il vino. Aggiungere poi il passato di pomodoro e lasciar cuocere per 2 ore, sempre a fuoco basso, mescolando di tanto in tanto e aggiungendo dell’acqua calda se necessario (se il sugo dovesse ritirarsi troppo, ndr) , fino ad ottenere un sugo denso.

Cuocere la pasta in abbondante acqua salata e scolarla al dente nel tegame del sugo. Ripassare 1 minuto a fuoco basso, aggiungendo il pecorino e mescolando per mantecare bene. Servire caldo.
