<RecipeText>Flour to coat the fish cake
Vegetable oil to fry the fish cakes

Method:
1. Place the potatoes in a large saucepan of boiling water. Cook over medium heat for 10-15 minutes or until soft.
2.Drain the potatoes using a colander. Allow to cool slightly before mashing with a potato masher or the back of a fork.
3. Mix the tuna, potatoes, spring onion, parsley, and lemon juice together with a spoon in the mixing bowl.
4. Season with said and pepper to taste.
5. Using your hands, form the mixture into small fish cakes. Us about a heaped tablespoon of mixture for each cake.
6. Coat each fish cake in flour.
7. Heat a little oil in a non-stick frying pan, over medium heat until hot.
8. Add the fish cakes. Don&apos;t put too much fish cakes in at the same time. Depending on the size of your frying pan, you may have to fry the fish cakes in several batches.
9. Cook the fish cakes for about 3-4 minutes on each side or until they are golden brown. Use a spatula to carefully turn the fish cakes over.
10. Serve with green peas or green salad.
