Preparazione
Monta a neve 1 albume con 1 pizzico di sale. Monta 1 tuorlo con 3 cucchiai di zucchero. Incorpora al composto di uova 250 g di mascarpone ben freddo di frigorifero. Amalgama delicatamente l&apos;albume montato a neve. Se vuoi una crema piu ricca, usa 2 albumi e 2 tuorli, unendo 1 cucchiaio di zucchero in piu. Metti la crema di mascarpone in frigorifero per 2-3 ore. Puoi servirla con biscotti, torte secche, panettone, pandoro, frutti di bosco o mescolarla a cioccolato spezzettato. Usala anche per preparare un dessert simile al tiramisu, alternando in una grande coppa strati di crema al mascarpone con fette di pan di Spagna o savoiardi imbevuti rapidamente nel caffe. Alla fine spolverizza con cacao in polvere.
