<RecipeText>Private il cavolfiore delle foglie esterne, dividetelo in cimette, quindi lavatelo bene e fatelo lessare in acqua bollente salata per circa 10-12 minuti, poi sgocciolatelo accuratamente. In un largo tegame fate sciogliere la margarina, unitevi il cavolfiore e, sempre mescolando con un cucchiaio di legno, schiacciatelo bene, riducendolo in pure. Dopodiche trasferite il passato di cavolfiore in una terrina, incorporatevi il grana, un uovo, un p i z z i co di sale, una macinata di pepe, una grattata di noce moscata e mescolate. Se il composto si presentasse troppo morbido, unite un po&apos; di pangrattato. Con un cucchiaio prendete un po&apos; di composto e formate delle polpettine poco piu grosse di una noce. In una terrina sgusciate l&apos;uovo rimasto, salatelo e sbattetelo con una forchetta. Infarinate le polpettine preparate, poi passatele nell&apos;uovo sbattuto, quindi nel pangrattato, premendo bene con le palme delle mani per far aderire la panatura. Coprite d&apos;olio il fondo di una padella per fritti e quando il condimento sara ben caldo friggetevi le polpettine, lasciandole dorare in modo uniforme e rigirandole spesso. Sgocciolatele quindi dall&apos;olio e mettetele su un foglio di carta assorbente da cucina per eliminare l&apos;unto in eccesso. Servitele subito, ben calde.
