Treasa's Crabcakes

3/4 cup | mayonnaise |
1tbsp | chopped cilantro |
1tbsp | chopped fresh basil |
1tsp | dry mustard |
1 | shallot minced |
1 tsp | hot sauce |
1 lb | lump crab |
1 cup | dry bread crumbs, (Panko works well) and more for coating |
2 tbsp | vegetable oil |
2 tbsp | butter |
Salt | |
pepper to taste |
Mix dry ingredients and herbs
Add mayo, then lump crab, carefully folding together (fingers work well)
Make patties and coat with dry breadcrumbs
Fry in 2 batches using 1tsp oil and butter for each batch
