Strawberry Chicken Salad

| STRAWBERRY CHICKEN SALAD | |
| ¼ c. | reduced calorie mayonnaise |
| ¼ c. | plain non-fat yogurt |
| 2 tbsp | sweet pickles, chopped |
| 1 tsp | lime peel, grated |
| 1 tsp | salt |
| 1 tsp | curry powder |
| 1 tbsp | lime juice |
| 2 c. | cooked chicken, diced |
| 1 c. | chopped celery |
| ¼ c. | red onion, chopped |
| 2 c. | strawberries, stemmed and sliced |
| Lettuce leaves | |
In a large bowl, mix mayo, yogurt, pickles, lime peel, salt, curry powder and lime juice. Add celery, onion and chicken. Toss, cover and chill. Just before serving – wash and slice strawberries. Gently toss with mixture. Line a platter with lettuce, mound chicken mixture in centre. Garnish with remaining whole strawberries.
