| 1 | large, ripe tomato, cut bite size |
| 1 | small, red onion, thinly sliced |
| 1 c. | thinly sliced pepper, red or yellow |
| ¼ c. | red wine vinegar |
| ¼ c. | extra virgin olive oil |
| 1 tsp. | basil |
| 1 package | cheese tortellini |
| 1 bag | lettuce mixture |
| Mozzarella cheese, cut in small cubes | |
| 1. Cook tortellini and cool. 2. Meanwhile combine tomato, onion, lettuce and pepper. 3. Dressing: | |
| ¼ cup | red wine vinegar |
| ¼ cup cup | extra virgin olive oil |
| 1 tsp | basil |
4. Add tortellini to lettuce, add dressing and toss.
