German gingersnap Christmas cookies with frosting Eileen Taylor

2 eggs. 1 tsp ginger. 1/2 tsp cloves | |
1 cup | brown sugar. 1 cup grandma's molasses. 1 cup lard, (melted) |
2 tsp | baking soda in 1/8 cup hot water. 1 1/2 tsp vinegar |
2 (1 oz) squares | melted chocolate. 1 tsp salt |
1 tsp | cinnamon About 5 cups flour |
Mix all above ingredients (add flour last) Roll out dough and cut with festive cookie cutters place on parchment on cookie sheets. Bake at 350 degrees 10-12 min. | |
Frosting | |
1 cup | white sugar. 1 egg white. 1/8 tsp cream of tartar |
1/3 cup | water |
Combine sugar, water, cream of tartar. Stir on high Heat until dissolved.
Cover and continue cooking 3 min. Meanwhile beat egg white. Pour 3 Tbs of syrup over beaten egg whites. Continue beating and cook remaining syrup until 240 degrees. Add syrup to egg white slowly continue beating till forms stiff peaks
Frost cookies then sprinkle with colored sugar balls.
