Hearty Turkey/Spinach Soup

Ingredients | |
1 lb | lean ground turkey |
2 cloves | garlic, minced |
8 cups | organic chicken broth |
2 (14.5 oz) cans | Italian-style stewed tomatoes, (no sugar added) |
2 cups | sliced carrots |
2 (14.5 oz) cans | great northern beans |
3 medium | zucchini, cubed |
1 lb bag | Fresh Spinach |
1/2 tsp | salt |
fresh ground black pepper |
(Water if needed for desired consistency)
Directions
In a separate pan, brown turkey and drain. Add garlic, chicken broth, tomatoes and carrots. Reduce heat and simmer very low for 15-20 min. Stir in beans and zucchini. Cover, and simmer another 10 minutes. Remove from heat and add spinach. Stir well and cover with lid to allow spinach leaves to wilt. Season with sea salt and pepper. Serve immediately and enjoy to the last drop!
