Hearty Lentil Soup

Ingredients | |
2-3 cloves | garlic finely chopped |
1 cup | chopped onion |
2 medium | carrots, cut into wheels |
2 stalks | celery, chopped |
10 cups | vegetable broth |
2 cups | lentils |
1 cup | barley |
1 lb | fresh kale |
1 tbsp | allspice |
1 tbsp | extra virgin olive oil |
(Water if needed for consistency)
Directions
First put olive oil in a pot to coat the bottom. Then, add garlic, stirring to slightly start caramelizing. Pour vegetable broth into pot. Next, put in all other ingredients except kale. Include lentils, barley, carrots, celery and seasonings. Allow to simmer for 35 minutes. Lastly, add kale and stir in well and cook for an additional 15 minutes. Serve hot with a dollop of original Greek yogurt on top, if desired...stir in to make creamy!
