Crispy Pork Belly

Black Pepper to taste |
Pre-heat oven to 220 deg C. Score skin of pork belly, season with salt and black pepper to taste.
Place sage leaves at bottom of roasting pan, cover with pork belly and pop into oven for approximately 25 minutes or till crackling is browned.
Remove from oven and and pour in milk to reach halfway up pork belly, pop back into oven at 160 deg C for another 90 minutes.
Remove when ready and serve warm.
