2 cups | sugar |
2 cups | light corn syrup |
1/2 cup | butter |
2 cups | evaporated milk |
2 tablespoons | vanilla |
2 cups | chopped pecans |
Dipping chocolate
Combine sugar, corn syrup and butter in a 4 qt pot. Bring to a boil. Slowly add 1 cup evaporated milk so mixture continues to boil. Continue to boil on medium for 15 minutes stirring every minute or so. Add 2nd cup of evaporated milk slowly while continuing to boil. Put candy thermometer in and continue to boil, stirring constantly, until thermometer reads halfway between soft ball and hard ball. Remove from heat and wait for boiling to stop. Stir in vanilla and nuts. Spray 2 spoons with cooking spay and drop mixture by spoonfuls onto greased cookie sheet. Stick turtles in freezer until hard enough to dip. Melt chocolate in crockpot. Dip turtles.
