<RecipeText>Per prima cosa preparare la pastella per le crepes sbattendo in una ciotola le uova con un pizzico di sale e 30 gr di zucchero. Incorporare la farina e il latte mescolare fino ad ottenere una pastella liscia. Lasciare riposare per almeno mezz&apos;ora. Prima di iniziare a cuocere le crepes aggiungere alla pastella 20 gr di burro fuso e due cucchiai di liquore.
Imburrare una padella e versare un mestolo di pastella. Ruotare la padella per distribuire la pastella in modo omogeneo su tutta la superficie. Cuocere un minuto e poi girare la crepes aiutandosi con una spatolina o al volo.
Una volte cotte tutte le crepes metterle da parte al caldo.
Per preparare la salsa Suzette grattugiare la scorza di un arancia e di un limone e mescolare assieme allo zucchero pestando con un cucchiaio in modo che gli oli aromatici delle scorze impregnino lo zucchero. Spremere il succo delle due arance.
Nella padella in cui avete cotto le crepes, a fuoco basso scogliere il burro rimanente assieme al composto di zucchero e le scorze degli agrumi avendo cura di mescolare bene. Quando il burro e lo zucchero si saranno amalgamati bene aggiungere il succo delle arance filtrato, mescolare e lasciare addensare e aggiungere quindi due bicchierini di liquore.
A questo punto potete immergere le crepes nella salsa lasciandole insaporire qualche secondo e ripiegandole due volte a metà.
La salsa Suzette puó essere preparata anche prima, conservata in frigo e scaldata al momento dell&apos;utilizzo.
