Bean and vegetable mash

1 | onion chopped |
1 stalk | celery thinly sliced |
1 | carrot peeled and thinly sliced |
2 lb Yukon gold potatoes peeled and cut into 1" cubes | |
1 16oz can | white beans, drained and rinsed |
S&p
1) heat oil in medium saucepan over medium heat. Cook onion celery handcart until translucent, 6-8m. Add potatoes and white beans and cover with water by 2". Season generously with salt. Bring to a boil then reduce heat and simmer until potatoes are tender, 8m. Drain, reserving 1c cooking water.
2) mash vegetables, adding reserved water to adjust consistency. Season with s&p.
