Grandma Backlund's Lemon Pie

1 lb | sugar |
6 | eggs, (leave out 2 whites) |
3 lemons juiced 2 lemon rinds finely grated | |
whipping cream |
Beat eggs. Place butter, sugar, grated rind and lemon juice into a double boiler
and keep stirring until the sugar is dissolved and it thickens like honey. DO NOT LET IT BOIL!
Whip cream and spread over pie. Chill
