Easy Curried Mustard Greens and Beans

1 bunch | mustard greens, washed and cut into bite size pieces |
1/2 small | red onion, chopped |
1/2 t | grated fresh gingeroot |
1 can | beans, rinsed and drained |
1/2 c | coconut milk |
1 jar | Trader Joes curry simmer sauce |
Blanch greens briefly in boiling water then drain
Saute onion and ginger in olive oil, add remaining ingredients and simmer 20-30 minutes to meld flavors
Serve over brown basmati or jasmine rice
