Lemon Rice Pilaf

1/4 c. | butter |
4 | celery ribs, sliced |
6 | green onions, sliced |
2 c. | uncooked long-grain rice |
1 (32 oz.) container | chicken broth |
2 Tb. | lemon zest |
1/2 tsp. | salt |
1/4 tsp. | pepper |
1. Melt butter in a large skillet over medium-high heat; add celery and green onions, and saute 3-4 minutes or until celery is tender. Stir in 2 cups rice, and saute 2 minutes or until golden brown. Stir in broth, and bring to a boil. Cover, reduce heat to low, and simmer 20 minutes or until liquid is absorbed and rice is tender. Stir in lemon zest, salt and pepper.
