Hand Pulled Noodle Dough

156g | cake flour |
25g | all-purpose flour |
110mL | warm water |
2g | salt, (1/3) tsp |
1g | baking soda |
~6g vegetable oil (optional)
Hand knead for about 45 minutes.
Roll and twist the dough for about 10-15 minutes, or until the dough feels soft and moldable. The dough shouldn't spring out if you poke it.
Pull dough (introducing more flower) and fold repeatedly until formed into thin strings, then cook in boiling water for 1-2 minutes.
Add to soup or stir fry.
