Sortir le beurre quelques heures avant. Dans robot, lait tiède, eau tiède, sucre, sel et oeufs. Ajouter farine et levure émettiée dans un peu de lait tiède. Pétrir 10mn à vitesse 2 (100 tours par minute) Incorporer le beurre en petits morceaux. Pétrir encore 15 mn à vitesse 4. La pâte va devenir lisse et élastique. 2. Couvrir d'un torchon et laisser lever pendant 2 à 3 heures jusqu'à ce que la pâte double de volume. 3. Rompre la pâte pour chasser l'air. Couvrir le récipient d'un film étirable et mettre au frigo toute la nuit. 4. Rompre à nouveau. Diviser la pâte en morceaux ou mettre en entier dans un moule à cake/brioche. Laisser lever jusqu'à doublement de volume (de 1h à 4h en fonction de la température et de la quantité de la levure). 5. Dorer au jaune d'oeuf.
