    1 1/2 cups  sliced fresh mushrooms, (4 ounces)
    8 medium  green onions, sliced, (1/2 cup)
    2 medium  tomatoes, chopped, (1 1/2 cups)
    2 cups  shredded mozzarella cheese, (8 ounces)
    1 1/4 cups  Original Bisquick® mix
    1 cup  milk
    1 1/2 teaspoons  salt
    1 1/2 teaspoons  chopped fresh oregano leaves
    1/2 teaspoon  dried oregano leaves, alternative
    1/2 teaspoon  pepper
    12  eggs

Heat oven to 350°F. Grease rectangular baking dish, 13x9x2 inches. Layer sausage, mushrooms, onions, tomatoes and cheese in dish.
2 Stir remaining ingredients until blended. Pour over cheese.
3 Bake uncovered 30 to 35 minutes or until golden brown and set.

Spice it up! Use chorizo or hot Italian sausage instead of the bulk pork sausage for more heat.

No cutting board is needed if you buy sliced mushrooms and already-cut tomatoes. And the green onions? Just snip them with a kitchen scissors directly over the mushrooms.

I made this to serve at a breakfast for a high school water polo team. I omitted the vegetables and added half a container of salsa. It was delicious but the boys didn't scarf it down like they do with almost everything else. I think it was because the dish looked a bit unappealing due to a dark orange hue (caused by the salsa I guess) When I make it again, perhaps I'll try sprinkling some cheese on top to make it look more appetizing.

I didn't put in tomatoes, as my husband and I don't particularly like them. Instead, I added 1/4 cup more milk. I also used 1/3 of a large white onion instead of green. Added an extra spoonful of Bisquick too, don't know if it made much difference though. Delicious! The leftovers keep very well.

I am useless in the morning. I just can't function. Having this recipe available was so nice! I cut it up and froze half of it and it still comes out great in the microwave after heating it up from frozen. Instead of tomatoes I used salsa to give it a little kick! It is easy, delicious, and so handy to have a good breakfast when you are in a hurry or don't want to fuss with it. I loved this one.
