<RecipeText>Make a mesh of shallow cuts on the pork slices, with a spacing of about 1 inch. Sprinkle with salt and pepper. Dust generously with flour, also inside the cuts. Remove the excess of flour. Dip in the beaten egg, and coat with the breading.
Put the breaded pork in the oil heated to 340F (1701?4C). When the pork slices rise to the surface and have a nice-looking brown color, take them out of the oil and let the oil drip.
Cut the pork in bands, and eat with chinese-style mustard and tonkatsu sauce. Instead of tonkatsu sauce, you can use a mix of Worcestershire sauce and ketchup.
Serve with tomato, cabbage and parsley, a bowl of steamed Japanese rice on the side and a bowl of miso soup.</RecipeText>
