| 1 | sweet potato, peeled & cut 1/4" dice |
| 1 | beet, peeled & cut 1/4" dice |
| 1 Tbsp | olive oil |
| Salt | |
| pepper | |
| 1 slice | bacon |
| 1 small | onion, diced |
Preheat oven 400 degree
Toss potatos, beets, oil, salt & pepper
Place on parchment lined baking sheet
Bake until golden 25-30 min tossing every 10 min
Meanwhile cook bacon over med low to render fat & crispy
Add onions & salt, cook to caramelized about 10 min
Add potatos & beets to pan, taste & adjust seasoning
Cook 5 min
Serve
