Ginger Pancake Roll-Ups

Pancakes: | |
2 c. | Bisquick Biscuit mix |
1 tsp. | cinnamon |
1/2 tsp. | cloves |
1/2 tsp. | ginger |
1 | egg |
1 1/2 c. | milk |
vegetable oil for brushing pan | |
2 (8 oz.) pkg. | cream cheese |
Sauce: | |
1/2 c. | butter, melted |
1 | egg, well beaten |
1 c. | sugar |
zest of one lemon | |
1/4 c. | water |
3 Tb. | lemon juice |
1. For the Pancakes: Mix dry ingredients, then slowly add wet; mix well into a smooth batter. Heat a pancake griddle or nonstick pan on medium-high and brush with oil. Ladle batter onto griddle and cook pancakes on one side until bubbles are visible on top, then flip and cook other side until golden.
2. Cut each cream cheese package into 6 pieces. Roll each pancake around piece of cream cheese.
3. For the Sauce: In a medium saucepan over medium heat, gradually add ingredients one at a time, beating well. Continue stirring constantly (otherwise egg will cook) until mixture thickens slightly.
$. To serve: Pour warm sauce of pancake roll-ups.
