    1 lb  hamburger
    2 large  russet potatoes, peeled and diced
    1/2 C  yellow onion , diced
    1/2 C  green pepper , diced
    1 Tbl  fresh garlic, minced fine
    1 Tbl  olive oil
    1 tsp  salt
    1 tsp  coarse ground pepper
    1 tsp  ground cumin
    2 large  tomatoes

Heat a skillet, add olive oil. Add ground beef, and onions, and when lightly browned, add green pepper, garlic, and all spices. Cook for 10 minutes, stirring often, then add diced potatoes. Cover, reduce heat to medium low, and simmer for about 40 minutes, until potatoes are done. Add tomatoes, cook for 5 minutes. Remove from heat; can serve with rice. or in a warm tortilla. Also use to stuff green peppers.
