Onion Pie

1 Pillsbury refrigerated pie crust | |
3 Tbl | butter |
3 | eggs, beaten |
1 tsp. | salt |
pepper | |
2 Tbl | skim milk |
4 large | onions, cut in strips |
1 12-oz can | fat free evaporated milk |
1/2 C | Gruyere cheese, grated |
1 Tbl | cornstarch |
Saute onions in butter. Add canned milk and bring to boil. Transfer all into a bowl and allow to cool. Add eggs and cheese, salt and pepper. Mix skim milk with corn starch to make a smooth paste. Add to filling and pour into pie pan, after piercing the crust bottom with a fork. Bake at 350 for 30-40 minutes.
